Soul Tavern, first Miami Beach vegetarian gastropub and elixir bar,  focuses on vegetarian comfort food and healthy elixirs served in a laid-back setting. Soul Tavern is the brainchild of owner Jason Gordon, who has his doctorate degree in Chinese medicine, and Executive Chef Kristof Czartoryski created the menu based on the five elements of Chinese medicine including wood, fire, earth, metal and water.

Each dish on the menu balances all five elements featuring starters and small plates like Hemp Encrusted Edamame Cakes ($12) with black tahini and a lotus root fennel salad, and Mushroom Ceviche ($12) with wild mushrooms, jasmine steamed sweet potato, crispy togarashi choclo. Soul Fired Pizzas ($16) topping options includes mushrooms, ginseng, pomegranate, pistachios, beets and lotus root. Sushi, including the Scale-Up Maki ($14) with tofu quiche, asparagus, crispy shallots, caviar & chives, and Yami Konnyaki ($14) with devils tongue, salted plum, caramelized onions, spinach, tempeh, miso enoki. Main entrees include Eggplant Medallion ($18) with potato, chayote, ratatouille, mac-nut alfredo, herb salad, Yuca Encrusted Tofu Quiche ($18) with cumin black beans, coconut brown rice, longan- mango salsa, Soulful Ramen ($18) with plant broth, GF yam noodles, mushrooms, seasonal veg, sesame paste, or Porto Miami Burger ($17).

The bar features beers, wine, sake, and a craft cocktails. The sommelier, Dale Thomas Vaughn, the author of “Beer Snobs Are Boring,” created a line of 37 Chinese herbal elixirs that do everything from soothe achy muscles and calm mood swings to help you sleep better (limit 3 per person per day), plus a line of 25 cold-pressed juices will also be on hand.  #SoulTavern @Soul_Tavern
