1 Rooftop of 1 Hotel & Homes South Beach, invited guests celebrated the much anticipated Grand Opening of the worldâ€™s first sustainable sushi pop-up, PREY. Kicking off Miamiâ€™s most food-focused week with a bang, 1 Hotel & Homes South Beach has set out to revolutionize the South Beach Wine & Food Festival and restaurant playing field like never before. Led by James Beard Foundation Award Nominated Chef Bun Lai, PREY pays homage to the predator and prey interconnections of the food chain. Continually striving for an eco-conscious environment, 1 Hotel & Homes South Beachâ€™s limited-time, 1 Rooftop-restaurant brings a whole new kind of animal to the hospitality table.
Making non-native species a delicacy, items on the menu were not only prepared by, but personally hunted, dived and foraged for by Chef Bun Lai. Invited guests enjoyed dishes such as Finger lickinâ€™ Carp Ribs, Roasted Feral Pig and Tempura Weed Che paired with foraged berry and plant sake as well as signature cocktails. To add to the evening, a fortune teller and dancing geishaâ€™s enchanted guests, all while enjoying the musical stylings of DJ Goldroom and the breathtaking views of the Atlantic Ocean and expansive Miami skyline. Complementing the existing vibe of The 1 Rooftop, the 1 Hotel design team brought PREYâ€™s culinary approach to life through large scale murals, custom furniture and table tops, and nature inspired art pieces.
