Baby Jane, Brickell’s vibrant cocktail lounge and eatery, pushes the culinary boundaries by launching its latest venture, a new ramen popup called Shimuja. Shimuja is authentic Japanese Ramen from Kagoshima City, Japan – a sister city with Miami – meaning “With No Wicked Thoughts In Mind,” the brainchild of acclaimed Founder and Master Chef Keiichi Maemura.
Boasting a carefully curated menu that embodies the warm and comforting flavors of Japanese soul food – a bowl of steaming noodles in flavorful broth â€“ Native Sons Hospitality (the emerging hospitality group behind Ariete, helmed by Sidebar’s Jason Odio and Cyprus Room alum, Chef Michael Beltran, along with Odio’s longtime mentor, nightlife honcho Roman Jones,) brings this unique, one-of-a-kind experience to Miami Brickell.
Chef Maemura serves ramen tonkotsu-style, with milky broth cooked from scratch using pork and pork bones, including Tonkotsu ($15), Shiro Shoyu ($15), and Kagoshima Special ($20). On the menu you can also find few rice bowls Chashu and Mentai ($7). New additions to the appetizers menu are Edamame ($6), Shishito ($6), Shimuja Cucumbers ($7), Mozzarella Mentaiko Harukami ($6), and two peace Pork Bun ($9), plus new Shimuja’s exclusive organic green tea – Chiran-Cha ($5) .
