The Ritz-Carlton has replaced the Cioppino restaurant with oceanfront, coastal-cuisine concept, named Lightkeepers after the lighthouse keepers of Key Biscayne’s Cape Florida Lighthouse in the 1800s. An open kitchen features a raw bar and charcoal Josper grill-oven. The modern blue-and-green surroundings incorporate wood accents and an indoor-outdoor bar. A large terrace overlooks a palm-tree-lined pool and the ocean beyond.
Executive Chef Raul A. Del Pozo has developed an inviting menu influenced by the abundance of fresh seafood sourced from the southern waters of Florida and the fertile soils of the Florida Keys, northward. With cheeses from Winter Park, beef from Ocoee, and snapper from Key West, locally grown and caught ingredients are key to the quality and diversity of the menu.
