COMO Metropolitan Miami Beach has launched Traymore, its collaboration restaurant with award-winning chef, Michael Schwartz. The cuisine at Traymore by Michael Schwartz combines Schwartz’ passion for fresh, clean Floridian flavors and bright South Asian influences.
Michael Schwartz’s menu celebrates in-season, local ingredients, in line with COMO’s award-winning restaurants worldwide which embrace sustainable sources and pay homage to the flavors of our different locations. To each dish, Michael adds sophisticated Asian nuances, which also speak to COMO’s roots, with hotels and restaurants in Singapore, Thailand and Indonesia. In addition to Traymore restaurant, Michael Schwartz oversees in-room dining, poolside dining as well as the bar, featuring a vibrant cocktail list.
The restaurant features a Raw Bar and a Market Table, where the menu highlights include a beef carpaccio with heart of palm, kohlrabi, peanuts, burnt lime vinaigrette starter and wok-charred wild salmon with four sprout salad, toasted pumpkin seeds and soy lime vinaigrette. Black sesame pound cake with coconut cream, marinated papaya and toasted sesame seed is just one example of the desserts on the menu.
Traymore by Michael Schwartz at COMO Metropolitan Miami Beach is also presenting their first Miami Spice by offering both lunch and dinner menus! Each three course menu features a robust offering of Traymore’s tired and true favorites. Traymore’s Miami Spice Dinner Menu ($39) offers guests the option of how filling their experience will be with lighter and heavier options available.
