4th annual touring culinary competition and tasting event celebrates heritage breed pigs for the first time in Miami at Four Seasons Miami. Cochon 555 â€“ five chefs, five pigs, five winemakers â€“ is a one-of-a-kind traveling culinary competition and tasting event to promote sustainable farming of heritage breed pigs. Cochon 555 Miami challenged five local chefs to prepare a menu created from heritage breed pigs, nose-to-tail, for an audience of pork-loving epicureans. Miami competing chefs included Michelle Bernstein of Michyâ€™s, Aaron Brooks of EDGE Steak & Bar at Four Seasons Miami, James Petrakis of the Ravenous Pig, Michael Schwartz and Bradley Herron of Michaelâ€™s Genuine Food & Drink, and James Strine of CafÃ© Boulud Palm Beach.Â GuestsÂ were treated to an epic pork feast of five whole heritage pigs prepared by five chefs and wines from five family wineries, including Elk Cove Vineyards, Scholium Proiect, Sokol Blosser, Chehalem Wines, and K Vintners. The evening also include wines from SALDO, a butcher demonstration, an interactive tasting contest with Le Creuset, Anchor Brew, tastings of Chinaco Tequila, the “Perfect Manhattan” Cochon 555 Bar with Daniel Hyatt of Alembic featuring five craft American spirits, and Domaine Serene of Oregon paired with Iberico De Bellota by Fermin. After the judging closed, Jeffery McInnis of Yard Bird served a Heritage BBQ whole hog family meal. The feast concluded with a 25th anniversary champagne toast to the James Beard Foundation, sponsored by Laurent-Perrier Champagne, now celebrating its 200th year. Farrarelle was the official water of the tour. At the end of the night, attendees and local judges selected the Princess of Pork: Michelle Bernstein. As the winning chef she will go on to compete against other regional winners at the finale Grand Cochon event at the FOOD & WINE Classic in Aspen, June 17, 2012.
