Kokoriko Natural Rotisserie, a fast casual concept thatâ€™s operated in Colombia for almost 45 years, opens in Miami on Friday, April 27, 2012. Kokoriko is offering 50 percent off its entire menu Friday through Sunday. That includes alcoholic and non-alcoholic beverages. The American concept was created in collaboration with Richard Sandoval, whose restaurant group operates everywhere from New York to LA., Mexico to Qatar. Kokoriko stars with free-range, all-natural chicken marinated for at least 48 hours before hitting the rotisserie. The menu also includes half boneless chicken â€œchurrasco,â€ jicama cucumber salad and Sandovalâ€™s twist on the Venezuelan dish, corn cachapas pancakes. Thereâ€™s also ajiaco, Colombian-style creamy potato and chicken soup, and the Kokoriko chopped salad with rotisserie chicken, tomato, bacon, cucumber and jack cheese, with avocado dressing. Average check is $20 per person.
