In its first of a series of monthly special events and dinners, 8 oz.’s new location in North Miami Beach is hosting a hog butchery class and beer pairing dinner on September 10th beginning at 8pm. Chef Al Sternweiler will be flying in to run the class. Chef Al is chef/partner at 8oz.’s sister-restaurant, Chicago’s award winning Butcher & the Burger, currently nominated as “Manliest Restaurant in America”, and winner of “Manliest Burger in America”, which will be featured on an episode of Food Paradise in November. He will be breaking down a half hog trapped wild in the Everglades by Justin Jackman, of Jackman Farms and will be preparing a number of dishes using the belly, shoulder, head, and other parts, which will be paired with the Stone beers. The Butchery & Beer series is open to the public for $75 per person and includes the class, beer and dinner.
