There are few wine regions that have spawned more legends than Champagne: the story of the old blind monk who declared he was ‘tasting the stars’ the first time he drank sparkling wine, Madame Clicquot in the 19th Century supposedly discovered riddling, a novel technique to clear sediment from her Champagne bottles, to name a few. While the truth of these tales is unknown, what is clear is that centuries of fine-tuning technique, spectacular terroir and brilliant marketing have established Champagne as the epicenter of the most coveted sparkling wine in the world.  db Bistro Moderne welcomes Veuve Clicquot Chef de Cave Dominique Demarville. As Veuve Clicquot’s 10th Cellar Master, Demarville continues the 240-year-old Champagne house’s legacy. Join Sommelier Christopher Lindemann and Demarville for a Tasting of the Veuve Clicquot 2004 vintage, paired with a seasonally-inspired four-course menu prepared by Executive Chef Matthieu Godard and Pastry Chef Jerome Maure. Tickets are $262 per person and includes four-courses with wine pairings.
