M&V French-Italian Chef Fabrice di Rienzo recently moved here from Toulouse, France. Chef di Rienzo was formerly chef and manager of his own restaurant, La Table d’Auzeville, a restaurant “in the style of Escoffier,” in Auzeville, Tolosane, France. “I love great French cuisine,” Chef di Rienzo says. He is trained in the style of classic French cooking, and makes no secret that his cuisine is close to that of famed French Auguste Escoffier, the restaurateur and culinary writer who popularized and updated traditional French cooking methods.
Chef di Rienzo worked a year with Chef Daniel Boulud at Restaurant Daniel in New York; for two years with Chef Paul Bocuse at L’Auberge du Pont de Collonges at Collonges au Mont d’Or in France; and most recently, with three-Michelin-starred restaurateur Bernard Loiseau for three and a half years at the Hôtel-Restaurant Relais Bernard Loiseau in Salieu, France, before owning his own restaurant in Toulouse. It was during the time that he owned the restaurant that he won the prestigious “Laureate Prize,” with congratulations from the Mayor of the city of Toulouse, with “thanks for having put the gastronomy of the Toulouse metropolis in the spotlight.”
